
Y’all know that I love to cook. Cooking is definitely my self care (social work school term for the win!) and I thoroughly enjoy being in my kitchen. However, sometimes, every so often, the thought of laboring away over my hot stove makes me ill. Ok, that’s an exaggeration, but it does not sound like fun. Last night was one of those nights.
The basis of this dish is, you guessed it, our favorite root veggie: the sweet potato! Not only do we love them (as you know) but did you know you can “bake” a sweet potato in under ten minutes? Seriously! How easy did I just make your life? You can thank me later.
Todays “recipe” is more of a “how to”. How to: microwave a sweet potato. The toppings can be whatever you want, and I will list some of our favorites below!

Microwaved Sweet Potato
Servings: 2
Ingredients/tools: 2 sweet potatoes, two damp paper towels, a microwave
- Wash sweet potatoes.
- Use a knife to poke 8-12 holes around the sweet potato. This will keep it from exploding in your microwave.
- Wrap each potato in a damp paper towel. This will lend to the “steaming” effect on the potato.
- Microwave the two potatoes for ten minutes. Let stand for a few minutes before you attempt to unwrap and cut into the potatoes.
- Fill with your desired ingredients and enjoy!
BBQ Sweet Potato: Chicken (or pork), BBQ sauce, chopped red onions, baked beans and cheese.
Buffalo Sweet Potato: Chicken, buffalo sauce, blue cheese, and chives.
Tex Mex Potato: Chicken or beef, black beans, salsa, and cheese.
