Set it & forget it

IMG_1983The one kitchen gadget I cannot live without is my crock pot. I make something in my crock pot at least once a week! It’s not just for soups either… I’ve made pork chops, chicken, pasta. Today, however, we are starting off easy: chili.

I have a few different crock pot chili recipes, but this is my tried and true, basic chili recipe. No gimmicks, no special ingredients. Ok, there is one special ingredient… peanut butter. Yup, good ol’ creamy peanut butter. This is a trip I picked up a while ago, and I have found that it adds a rich, nutty flavor to your chili, without being over bearing.

This recipe also brings the heat, so use discretion with your spices!

Crock Pot Chili

Servings: 6

Ingredients

-1 pound ground beef (85%/15%)

-1 pound mild Italian pork sausage (ground)

-1 tablespoon peanut butter

-1 red onion (chopped)

-1 tablespoon minced garlic

-1 12oz can tomatoes w/ chilis

-1 cup beef broth

-3/4 cup marinara sauce

-2 12oz cans black or kidney beans (or one of each!)

-salt, pepper, cayenne, red pepper flakes, and parsley to taste

  1. In a pan over medium heat, sauté onions & garlic until soft.
  2. Add beef & pork to brown. Do not over cook, in fact, meat can be slightly under.
  3. Meanwhile, add all other ingredients to crock pot and combine.
  4. Add meat, onion, and garlic mixture and stir.
  5. Leave crock pot on high for two hours or low for 4 hours.
  6. Top with cheese (we like goat cheese crumbles!) or crushed tortilla chips, and enjoy!
