Hello! I’m back, and I’m married! Sorry for the hiatus, but I am here now. And I have brought with me the BEST chicken wings you could ask for.
We are Patriots fans, through and through. Down here in Texas, I think we are on our own on that. However, we have a few friends who are die hard football fans (Steelers, Bills, and Texans, unfortunately), and since we bought the house, we have loved having tailgate style, game day parties.
Tailgate food is the best. It just is. Buffalo wings, chips, dips, burgers, hot dogs, sausages, beer…. these are a few of my favorite things. The only thing better than tailgating food is a Pats victory, and luckily, we get to experience that almost every week (ZINGA!).
Anyway, I have worked and worked to perfect my wing method over the years, and I think I’ve finally found it. All thanks to a lovely sample lady at Sam’s club who turned me on to Frank’s Red Hot Seasoning (this post is in no way sponsored, just sharing a favorite ingredient of mine). Not sauce, seasoning. Marinating the wing portions and drumettes in this seasoning for about an hour before frying them does three things; 1. Ups the spice level. Like waaaay up. 2. Lends to an amazing crunch. 3. Gives so much flavor that, to be honest, you don’t even need the sauce, especially if you want a cleaner version (and by that I mean less sticky hands, not healthier. Who do you think I am?)
Anyway, for my wings, I do use my deep fryer, but you can use oil in a pot on your stove if you don’t own a deep fryer. I then pop them in the oven after adding the sauce to really let them soak it up and maintain crunchy skin at the same time. So, without any more game delay, lets get into these wings.
Game Day Wings
Prep: 1 hour
Cook Time: 15-30 minutes
Servings: 4
Ingredients
-1 pound chicken drumettes + 1 pound chicken wing portions
-3 tablespoon Red Hot Seasoning
-Salt & Pepper to taste
-1 1/2 cups Buffalo Sauce of choice (I use Franks Red Hot)
-2 tablespoons butter
Recipe
- In a bowl, toss chicken with seasoning, salt & pepper until mostly covered. Cover with plastic wrap and let sit in the fridge for as little as 1 hour.
- Pre heat oil. To cook chicken wings, oil needs to be at 350 degrees (F). If you are using a deep fryer, check for a chicken preset!
- About ten at a time, drop chicken into oil and let fry for four minutes. Take them out and place them on a cooling rack on top of a cookie sheet.
- Over low heat, melt butter and mix with hot sauce.
- Once all chicken is on the cooling rack/cookie sheet, use a brush to coat each piece in sauce.
- Pre heat oven to 350 degrees (F). Once ready, pop wings in the over for about 10 minutes.
- Done and done! Serve with ranch or blue cheese, celery and carrots, and for some extra flare, throw some chopped green onions on top!
