Pie is my favorite dessert! Any pie: fruit pies, chocolate pies, cheesecakes (they’re kinda like a pie…). Fun fact; we opted for a very small wedding cake and supplemented with pies (& cookies & puddings & lemon bars)! Also, pies always work. Summer? Make a cherry or blueberry pie. Fall? Apple or pumpkin! Winter? Pecan, chocolate… really anything.
Yesterday morning, our neighbor went to the emergency room because he was feeling under the weather. So I decided he probably could use a pie. Kentucky Derby Pie to the rescue (not entirely sure how it got it’s name, but I found it on Pinterest years ago and have tweaked it to get it just how I want it)! This recipe honestly could not be any easier. I made two, because I knew the hubs would want one to eat off of this week as well.
I used store bought crust because honestly, it was a Monday and who has time for scratch pie dough on a Monday? Not me. But Pillsbury pie dough is great and always works well for me. Plus it comes two to a pack, so you can make two pies at once.

Kentucky Derby Pie
Servings: 1 pie
Prep Time: 10 minutes
Bake time: 45 minutes
Ingredients
-1 cup granulated sugar
-1/2 cup flour
-a pinch of salt, to taste
-1 stick (or 1 cup) butter, melted
-1 cup pecans
-3/4 cup chocolate chips
-2 egs, beaten
-1 teaspoon vanilla
-1 unbaked pie crust
- Preheat oven to 350 degrees.
- Mix sugar and flour (I used my stand mixer, but you can mix by hand or with an electric hand mixture for all of these steps)
- Add beaten eggs, butter and vanilla. Continue to mix.
- Add pecans & chocolate chips
- Spray pie dish with cooking spray and lay in pie crust. Snip off any excess around the outside.
- Pour mixture into crust, your mixture should not reach the top of the crust.
- Bake at 350 for 45 minutes, or until crust becomes a golden brown.
