
Monday night is not my night for cooking. I want something quick and easy, but flavorful and filling. This chicken hits the spot. I served it with rice and black beans, and topped with a little guacamole.
Chili Verde Chicken
Time: 45 minutes
Ingredients:
-1 lb chicken breasts
-1/2 jar chili verde salsa (any brand, we use Kroger)
-1/2 cup shredded cheese (Colby, jack, cheddar… you choose)
-Salt & pepper
- Preheat oven to 400 degrees.
- Place chicken in casserole dish. Salt & pepper
- Cover chicken with salsa. Bake for 35 minutes.
- After 35 minutes, cover with shredded cheese and back for another ten minutes, or until cheese becomes golden.
And that’s it! Serve with rice & beans, over a salad, whatever your heart desires.
BONUS: This meal is also perfect for the crock pot to make shredded chicken for tacos & burritos. Simply put chicken and salsa in the pot and cook on low for 4-6 hours. Remove chicken and shred for a spicy protein for Mexican food!
