Monday Night Meals: Chili Verde Chicken

Monday night is not my night for cooking. I want something quick and easy, but flavorful and filling. This chicken hits the spot. I served it with rice and black beans, and topped with a little guacamole.

Chili Verde Chicken

Time: 45 minutes

Ingredients:

-1 lb chicken breasts

-1/2 jar chili verde salsa (any brand, we use Kroger)

-1/2 cup shredded cheese (Colby, jack, cheddar… you choose)

-Salt & pepper

  1. Preheat oven to 400 degrees.
  2. Place chicken in casserole dish. Salt & pepper
  3. Cover chicken with salsa. Bake for 35 minutes.
  4. After 35 minutes, cover with shredded cheese and back for another ten minutes, or until cheese becomes golden.

And that’s it! Serve with rice & beans, over a salad, whatever your heart desires.

BONUS: This meal is also perfect for the crock pot to make shredded chicken for tacos & burritos. Simply put chicken and salsa in the pot and cook on low for 4-6 hours. Remove chicken and shred for a spicy protein for Mexican food!
