So… our team lost the Super Bowl. It was a sad, sad Sunday in our house. I was fresh off of a plane, and got home around kick off, so I was not in charge of game day snacks. However, come Monday, hubby and I needed some comfort food.

I pulled out an old favorite: mac and cheese. Ooey, gooey, cheesy, carby, comfort goodness to mend our broken hearts. And it worked! My husband loved it and it definitely cheered us up on a gloomy day. Give this recipe a try when you are in the mood for something warm and comforting; I promise it will do the trick!
Mac and Cheese
Serves: 6
Time: 1 hour
Ingredients:
-1 pound elbow macaroni noodles, cooked to package instructions
-1/2 cup shredded cheddar cheese
-1/2 cup shredded mozzarella
-1/2 cup half & half
-2 tablespoons butter
-2 tablespoons flour
Topping: 1/4 cup bread crumbs, salt & pepper, parsley to taste, 1 tablespoon olive oil
- Cook noodles to package. Pre heat oven to 350 degrees.
- Over low heat in a pot, melt butter. Add flour and whisk to make a roux. Slowly add half & half while whisking continually. Slowly add cheese and whisk. Add pasta water to reach desired consistency. Add salt & pepper to taste.
- Add drained noodles to cheese sauce and stir.
- Pour cheesy noodles into a casserole dish. In a small bowl, mix the ingredients for the topping, and top the noodles with the mixture.
- Bake at 350 for 20 minutes, or until top browns and crisps. Serve and enjoy!
