Super Bowl Comfort

So… our team lost the Super Bowl. It was a sad, sad Sunday in our house. I was fresh off of a plane, and got home around kick off, so I was not in charge of game day snacks. However, come Monday, hubby and I needed some comfort food.

I pulled out an old favorite: mac and cheese. Ooey, gooey, cheesy, carby, comfort goodness to mend our broken hearts. And it worked! My husband loved it and it definitely cheered us up on a gloomy day. Give this recipe a try when you are in the mood for something warm and comforting; I promise it will do the trick!

 

Mac and Cheese

Serves: 6

Time: 1 hour

Ingredients:

-1 pound elbow macaroni noodles, cooked to package instructions

-1/2 cup shredded cheddar cheese

-1/2 cup shredded mozzarella

-1/2 cup half & half

-2 tablespoons butter

-2 tablespoons flour

Topping: 1/4 cup bread crumbs, salt & pepper, parsley to taste, 1 tablespoon olive oil

  1. Cook noodles to package. Pre heat oven to 350 degrees.
  2. Over low heat in a pot, melt butter. Add flour and whisk to make a roux. Slowly add half & half while whisking continually. Slowly add cheese and whisk. Add pasta water to reach desired consistency.  Add salt & pepper to taste.
  3. Add drained noodles to cheese sauce and stir.
  4. Pour cheesy noodles into a casserole dish. In a small bowl, mix the ingredients for the topping, and top the noodles with the mixture.
  5. Bake at 350 for 20 minutes, or until top browns and crisps. Serve and enjoy!
