Hi! Long time, no see. I have been BUSY. Don’t you hate it when life gets away from you? I feel like I blinked, and we’re almost half way through March.

This past Sunday, I was in a mood. When I’m in a mood, I like to bake. I don’t normally bake too much; I’m still learning, as baking is VERY different than cooking. So when I am in a mood and have the house to myself, I try a new recipe for a baked good!

I am going out of town this week, and I had some blackberries and lemons in my fridge that needed to be used before I left, so I decided to make a blackberry lemon loaf. I kind of wanted something like the lemon loaf at Starbucks (insert heart eye emoji). Part bread, part cake, all yummy.

I must tell you, this turned out DELICIOUS. The best part? My entire house smelled like sugary lemon goodness. Like I said, I had blackberries on hand, but you could totally use any berry you have or absolutely love. I have a feeling this would taste amazing with strawberries or blueberries, so let me know what you try!

 

Blackberry Lemon Loaf

Servings: 1 cake

Time: 75 minutes

 

Ingredients:

-1/2 cup melted butter

-1 cup sugar

-2 eggs

-1 lemon, zest and juice

-1 1/2 cups flour

-1 tsp baking powder

-1/4 tsp salt

-1/2 cup half & half (you can also use milk)

-1 cup fresh berries (again, feel free to get creative here!)

Glaze (optional)

-1/4 cup lemon juice

-1/4 cup powdered sugar

  1. Preheat oven to 350 degrees. Spray a baking dish with non stick cooking spray.
  2. In a bowl (I used my kitchen aid mixer) stir butter & sugar, eggs, lemon zest & juice together.
  3. In a separate bowl, whisk together the flour, baking powder, & salt. Add half the dry mixture to the butter mixture and let combine.
  4. Add milk and continue to mix. Add remainder of dry ingredients.
  5. Lightly coat your berries in flour (this will keep them from sinking to the bottom of your mixture) and fold them into your batter using a spatula.
  6. Pour mixture into baking dish. Bake for 50 minutes. Let cool on a rack. while the loaf is cooling, drizzle the glaze mixture on the top!
