Hello! After a loooong break, I’m back. I have not been cooking at all & I am so sorry. Mostly, I am sorry for my husband who has been having popcorn for dinner most nights. Cooking has been the last thing I wanted to do since I found out that I’M PREGNANT. While I haven’t been cooking in the kitchen, I’ve had something else cooking in my belly.
The first trimester was not kind to me. I could barely eat and what I did eat… well, it didn’t feel great. But as I rolled into my second trimester, things steadily improved and I am finally feeling like myself again. As we all know, a huge part of feeling like myself is cooking.

We had some out of town visitors this past weekend which meant that we ate everything Texas has to offer: steak, tacos, fajitas, margaritas (for those not with child), chips & queso… the list goes on and on. Come Monday, husband & I needed a detox. So I pulled out our old tried and true broccoli & garbanzo thing. I don’t have a name for it, sorry. I have been making this for years and it is one of my husband’s favorites! As always, it’s about as simple as a recipe comes. I hope you enjoy it!

Broccoli & Garbanzo Thing
Servings: 4
Time: 30 minutes
Ingredients:
-1/2 red onion, chopped
-2 cups broccoli, cut into small florets
-1 package grape tomatoes
-1 can garbanzo beans, drained
-1 tablespoon parsley
-2 tablespoons EVOO
-Salt & Pepper to taste
Directions:
- In a pan over medium heat, heat olive oil. Add onions and cook until translucent. Add parsley.
- Add broccoli and sauté for 5-10 minutes.
- Add beans and continue to cook, stirring occasionally.
- When broccoli and beans begin to brown, add tomatoes until soft.
- Season with salt and pepper throughout steps.
- Voila! Enjoy this quick and easy dinner!
