Pie is my favorite dessert! Any pie: fruit pies, chocolate pies, cheesecakes (they’re kinda like a pie…). Fun fact; we opted for a very small wedding cake and supplemented with pies (& cookies & puddings & lemon bars)! Also, pies always work. Summer? Make a cherry or blueberry pie. Fall? Apple or pumpkin! Winter? Pecan, chocolate… really anything.

The BEST Hot Wings
Hello! I’m back, and I’m married! Sorry for the hiatus, but I am here now. And I have brought with me the BEST chicken wings you could ask for.
Casseroles: my true passion

There is literally nothing easier than a casserole. You can use leftovers & canned ingredients, in one pot, and all of a sudden you have a dinner, leftovers for lunch tomorrow, and some very happy tummies. They’re usually ooey, gooey, and more often than not, cheesy. This casserole is so simple, and if you have a case iron skillet or dish, you can use one pot to go from stove to oven (I did not, I used a skillet then layered my ingredients in an old school casserole dish).
Set it & forget it
The one kitchen gadget I cannot live without is my crock pot. I make something in my crock pot at least once a week! It’s not just for soups either… I’ve made pork chops, chicken, pasta. Today, however, we are starting off easy: chili. Continue reading “Set it & forget it”

Eggplant Ragu

We eat a lot of eggplant. I came up with this, what I like to call “Italian Stir fry”, a few years ago, and we make it pretty often. The garlic, onions, oregano and parsley bring intense flavor, and the eggplant brings a fun texture. I also mix in fresh tomatoes in addition to the tomato sauce to keep it fresh, as well as spinach to up the veggie content even more.

My favorite thing in the entire world is coffee. I worked as a barista at a local coffee shop during graduate school and I became somewhat of a coffee snob. My fiancé LOVES sweet potatoes. Well, he loves sweet potato fries. I agree, sweet potato fries are awesome, in fact, we’re having them tomorrow (spoiler alert!), but these root veggies can do so. much. more.
